Take your entertaining game to the next level with this easy, cheesy recipe that lets your slow cooker do all the work!

College was a crazy time. I recall many late-night cram sessions fueled by greasy takeout orders of spicy breaded chicken wings. I’d haunt the local watering hole between classes, calling Buffalo chicken wings, beer, and fries a balanced dinner. It’s no wonder I packed on that “freshman 15”!
Now that I’m older and wiser, I’ve embraced a low-carb lifestyle with my partner. We avoid most bar food—though memories of spicy, creamy, tangy Buffalo sauce often leave me longing for those carefree days of my youth. Sigh.
When we were planning a mini-reunion of our friends from university, we wanted to include some nostalgic appetizers without totally wrecking our dietary goals. My partner found this keto Buffalo chicken dip recipe—which became the centerpiece of our buffet table.
It was super easy to cook this dish in our slow cooker. I loved how the aroma of my favorite hot sauce filled our home while the chicken cooked. Then the cheeses and ranch dressing all melted together to create an insanely rich, thick, creamy dip. It tasted so much like the wings from the takeout place in our college town that our friends couldn’t stop scooping it up while recounting their escapades! It’s an excellent crowd-pleaser for revisiting past indulgences with a more grown-up sensibility.

How do I store leftovers?
Allow your Buffalo chicken dip to cool completely before storing it—but don’t let it sit out at room temp for longer than 2 hours. Store leftovers in an airtight container in the fridge for up to 4 days. You can also freeze this dip for up to 3 months, though it is likely to separate a bit from the freeze-thaw process. Thaw overnight in the fridge. Reheat in the oven or microwave, stirring occasionally to recombine the ingredients.

Keto Buffalo Chicken Dip Recipe
Ingredients
- 2 small chicken breasts
- 1/2 cup hot sauce
- 8 ounces cream cheese
- 1/2 cup mozzarella cheese
- 1/2 cup ranch dressing
- Celery sticks, bell pepper slices, etc. optional, for dipping
Instructions
- Add the raw chicken breasts and hot sauce to the slow cooker. Cook on low for 6 hours or high for 3 hours—until the internal temperature of the chicken reaches 165°F.
- After it's fully cooked, use two forks to shred the chicken breast while it's still inside the slow cooker.
- Add the cream cheese, mozzarella cheese, and ranch dressing to the slow cooker. Cook on low until all the cheese is melty, about another 30-60 minutes.

- Turn the slow cooker off and remove the lid. Use a large spoon and a spatula to gently fold the ingredients together, scooping from the bottom and folding over the top. Avoid aggressive stirring.

- Let the dip sit for about 10 minutes to thicken.
- Serve directly from the slow cooker or transfer the dip to a serving bowl and pair it with celery sticks or other low-carb dippers.
