Use this easy-to-make, seasoned, crunchy breadcrumb substitute as a keto breading or binder in all your favorite recipes.

We use breadcrumbs in cooking and baking for so many reasons. They add texture, flavor, and crunch to food—and they also work as a binder in recipes like meatloaf. But when it comes to low-carb, keto, gluten-free, or paleo diets, traditional breadcrumbs aren’t an option because they’re made with wheat flour and are chock-full of carbs.
Pork rinds are often the keto substitute of choice, but if you don’t eat pork, you need other options. Psyllium husk, lupin flour, or oat fiber can work—but they’re specialty ingredients that aren’t always easy to find. You can also buy premade gluten-free breadcrumbs, of course, but many of them are produced in factories that handle wheat, which carries a risk I personally wouldn’t take. That’s why I love this easy keto breadcrumb recipe. You can rest easy knowing it’s healthy, low-carb, and keto-friendly!
My goal is to make keto simple and accessible for everyone, whether you’re just getting started or have embraced a low-carb lifestyle for a while. These almond flour breadcrumbs are incredibly easy to make, taste fantastic, and provide the ideal, crunchy texture for breading. I always keep almond flour in my pantry because it’s so versatile and perfect in so many baking recipes.
Making breadcrumbs from scratch might sound intimidating, but it’s actually very simple. You just need five ingredients, some water, a hot skillet, and a little patience. In about 15 minutes, you’ll have a whole batch of golden, crunchy keto breadcrumbs ready for all your culinary creations!
Seasoning your breadcrumbs
As written, this keto breadcrumbs recipe uses simple seasonings like salt, pepper, and garlic. That simplicity means it will work in just about any recipe. But the great thing is that you can easily customize your breadcrumbs in many ways.
For classic Italian-style breadcrumbs, add dried oregano, basil, parsley, and a dash of onion powder. If you want a Spanish touch, try smoked paprika, cumin, coriander, cinnamon, and a little chili powder. For Cajun-inspired breadcrumbs, stir in some paprika, dried thyme, and a little cayenne pepper. If you’d like to add French flair, sprinkle in some aromatic herbes de Provence or a mix of tarragon and crushed pink pepper. And if you love a bit of heat, add red pepper flakes or a dash of chipotle powder for smoky notes. Classic seasonings like lemon pepper or Old Bay will work well, too.

How do I store leftovers?
Store your homemade gluten-free breadcrumbs in an airtight container in your pantry for up to 4 days or in the fridge for up to 1 week. You can also freeze the breadcrumbs for up to 3 months.

How To Make Gluten-Free Breadcrumbs (Keto, Egg-Free, Dairy-Free)
Ingredients
- 1 cup almond flour
- 1 teaspoon salt
- 1 1/2 teaspoons ground flaxseeds
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons water
Instructions
- in a bowl, mix together the almond flour, salt, flaxseeds, pepper, and garlic powder. Add water a little at a time and stir until the mixture resembles compact, wet sand.
- Heat a nonstick skillet over medium-high heat. You will not need any oil or butter due to the flaxseeds in the mixture.
- Cook the dough mixture in the hot skillet for 8-10 minutes. Use a silicone spatula or wooden spoon to continuously break up chunks as it cooks.
- The moisture from the dough will cook out and the dough will begin to toast. You'll notice a change in color and a nutty fragrance. The breadcrumbs will become darker and golden.
- Keep stirring and breaking up the crumbs so as not to let it burn on the bottom.
- You'll know the breadcrumbs are done cooking when they resemble little pellets or balls.
- Put the cooked breadcrumbs in a food processor and pulse until they are well broken up into a fine crumb.
