I love entertaining in summer. Having friends over to gather around the long, wooden table under my olive tree is one of the reasons this is my favorite season. I look forward to everything, from dreaming up the menu to setting the table with my vintage plates, polished silver, and sparkling tea lights. Even shopping at my local market for the ingredients gives me an incredible sense of joy.
Despite the thought that goes into organizing these seasonal alfresco soirées, my dishes are never intimidatingly fancy or complicated. In fact, it’s ease that I’m after when it comes to planning each course. The starter might be something as simple as bruschetta with tomatoes I marinated the night before. For the main, I’ll usually opt for grilled vegetables served cold and drizzled with olive oil, alongside assorted salads.
Dessert needs to be easy, too. And that’s why this low-carb peach cobbler made with an almond flour topping fits the bill so perfectly. The recipe lends itself beautifully to prepping ahead. I simply cook the cinnamon-infused peaches and make the topping a few hours before my guests arrive. Then, just before we finish the main, I slip away for a moment to assemble the cobbler and pop it in the oven. And that moment when I bring it out to the table, hot, bubbling, and with the irresistibly sweet aroma of ripe peaches—that’s when I usually earn a little round of applause.

On buying and storing peaches
During the summer months, peaches are one of the fruits I simply cannot resist at my local farmers’ market. Whether for snacking while standing over the kitchen sink (the only way to eat a ripe peach, in my opinion!) or using in everything from salads to desserts such as this cobbler, you can bet there will always be a bowl of peaches on the ready waiting on my kitchen counter.
When buying peaches, I always look for fruit that is unblemished, smells sweet, and gives slightly when pressed. The fruit should not be rock hard (unripe) or wrinkled (overripe). Bear in mind, however, that peaches will continue to ripen at room temperature, so if you’re not serving them on the day of purchase, a little unripe is fine. After about three days, they will be perfect. Peaches should not be stored in the fridge, unless they are ripe and you want to keep them a day or two longer.
Though fresh peaches are always best, you can always freeze peaches for desserts such as this one. Simply slice them, toss them with a little lemon juice, and flash-freeze them on a baking tray before transferring them to a plastic freezer bag. They will keep well in your freezer for up to three months.
How do I store leftovers?
Personally, I love eating cobbler when freshly baked while it’s still warm. However, once cooled, this cobbler recipe can be stored in an airtight container in the fridge for up to 3 days. Leftovers can also be transferred to a freezer-safe container and frozen for up to 3 months. The cobbler can be defrosted overnight in the fridge. Reheat the cobbler in the oven at 350°F for approximately 15 minutes.

Easy Low-Carb Peach Cobbler
Ingredients
For The Peaches:
- 4 tablespoons butter
- 1 pound fresh sliced peaches
- 3/4 cup brown sugar substitute
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 1/4 teaspoon xanthan gum
For The Topping:
- 1 1/2 cups almond flour
- 4 tablespoons butter softened
- 1 egg beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 cup monk fruit or 1/2 cup powdered monk fruit
Instructions
- Preheat oven to 375°F.
- Melt the butter in a cast-iron skillet over medium heat. Add the sliced peaches, brown sugar substitute, cinnamon, and salt. Let the peaches cook while stirring continuously until slightly softened, about 5 minutes.
- Remove from heat, sprinkle xanthan gum over the peaches, and stir until dissolved. Set aside
- In a medium mixing bowl, combine all the ingredients for the topping. Use a fork to work everything together until a dough forms.
- Separate the dough into 4 or 6 equal balls. Use your hands to pat them into thin discs. Lay the dough discs on top of the peaches in the skillet, overlapping if necessary. Do not worry about completely covering the peaches with the dough.
- Bake for 25 minutes.
- Let cool 5 to 10 minutes before serving.
