I used to wrinkle my nose at fried food because when I got it at a restaurant, it would upset my stomach. But there’s something special about frying up my own little corn nuggets at home. I get to choose the ingredients, so I can ensure they’re high-quality. Plus, they’re so fun to share with friends and family over a drink or two. Just add a yummy dipping sauce, and the compliments will pour in!

While frying corn nuggets, the kitchen smells sweet and subtly of garlic, bringing everyone in the household together. It’s a quicker, crispier version of cornbread that’s easy to pop in your mouth while socializing. This is definitely a recipe you’ll want to keep in mind when having friends over for the holidays. You’re going to drool over these scrumptious corn nuggets. They’re like fluffy, sweet, and savory bites of gold!

Corn nuggets vs. hush puppies

Not going to lie—before I decided to move down south and try some of their most fanciful fried foods, I didn’t understand the difference between corn nuggets and hush puppies. But while the two are similar because they’re both deep-fried, there is one major difference. Corn nuggets are made with whole corn kernels, while hush puppies are made with cornmeal. As a result, corn nuggets are chunkier and crispier, without a distinct spherical shape like hush puppies have. I’m so excited to make the two side-by-side and have a little taste-testing party with my housemate!

How do I store leftovers?

Make sure your leftover corn nuggets have cooled to room temperature, and then transfer them to an airtight container. Refrigerate for 2-3 days or freeze them in a freezer-safe container for up to 3 months and then thaw in the fridge overnight. To reheat them, place them on a baking sheet in the oven at 300°F for 5-10 minutes, until they’re crisp and sizzling again.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 tablespoon butter melted
  • 1 can corn (12 ounces) drained
  • Oil for frying
  • Preferred sauce for dipping

Instructions
 

  • In a bowl, whisk together the flour, baking powder, garlic powder, salt, and sugar.

  • In another bowl, beat the egg with the milk and melted butter until well blended.
  • Pour the wet mixture into the dry ingredients. Gently stir and fold in the drained corn until just combined.

  • Heat oil in a heavy pot to 350°F. Drop spoonfuls of the batter into the hot oil. Fry the nuggets for about 1-3 minutes per side or until they are light golden brown.
