The other night, my husband wanted to eat out. Again. I looked at him with a raised eyebrow and said, “I’d love to, honey, but our budget can’t really handle it right now.” Even though he didn’t outright show it, I could feel his disappointment from across the room. So, I walked over and kissed his head. “Don’t worry. I’ll make us some cheesy garlic bread to start.” That perked him up, and that night, we had a delectable dinner for two without busting our bank account.

Whether it’s as an appetizer or a side, cheesy garlic bread is one of the best ways to treat your family to a restaurant-level experience without even leaving the house. The beauty of it is—you don’t even need to stick to French bread. In a pinch, I’ll use whatever bread we have, and the luxurious blend of butter, fresh garlic, and melted cheese transforms any kind of slice into a piece of paradise. Well, close to it, at least.

Typically, I’ll serve cheesy garlic bread with spaghetti and meatballs or a nice steak. But when the budget is tight, I’ll do mac and cheese and chicken tenders. This dish even makes a lovely lunch alongside a simple salad. Light and bright or filling and flavorful, nearly every meal tastes better with the addition of cheesy garlic bread.

Which kind of cheese is best?

As you can see, this recipe uses mozzarella and Parmesan. With a mild and savory flavor, mozzarella melts nicely on toasted bread. Parmesan has a slightly stronger taste that brings everything together beautifully. These are the classic cheeses that most Italian restaurants use, but you could also use provolone and Romano cheese, or even cheddar if that’s all you have. In my experience, it’s hard to mess up cheesy garlic bread, no matter which kind of cheese I use.

How do I store leftovers?

Make sure your leftover garlic bread is at room temperature, and then transfer it to an airtight container. Keep it in the fridge for up to 3 days. Reheat it in the oven at 350°F until the cheese has melted again and the edges are crisp. It should only take about 5-7 minutes, but keep an eye on it just to be sure. For storage up to 1 month, freeze the cheesy garlic bread in a freezer-safe bag.

Ingredients
  

  • 1 loaf French bread (14 ounces)
  • 6 tablespoons unsalted butter softened
  • 2 garlic cloves minced
  • Salt and freshly ground black pepper to taste
  • 1 1/3 cups shredded mozzarella cheese
  • 1/3 cup finely grated Parmesan cheese
  • Fresh parsley finely chopped, for garnish

Instructions
 

  • Preheat your oven to 375°F. Slice the French bread loaf in half lengthwise. In a small bowl, mix the softened butter and minced garlic. Season with salt and pepper.

  • Sprinkle the shredded mozzarella and Parmesan cheeses evenly over the bread. Bake uncovered for about 8-12 minutes until the cheese is melted and bubbly and the edges are crispy. Garnish with chopped parsley, slice, and serve immediately.
