1large head cauliflowercut into bite-sized florets
2teaspoonsolive oil
1/2teaspoonkosher saltplus more to taste
1/4teaspoonfreshly ground black pepper
1teaspoonlemon zestfrom one lemon
1tablespoonchopped fresh parsleyoptional
Instructions
Fill a large pot with 1 to 2 inches of water and bring it to a boil over high heat.
Place the cauliflower florets in a steamer basket and set it in the pot, making sure the water does not touch the vegetables. Cover and steam for about 4 to 8 minutes until the florets are fork-tender.
Remove the florets to a bowl. Drizzle with olive oil, then sprinkle with kosher salt, black pepper, lemon zest, and chopped parsley. Toss gently to coat evenly.
Serve the cauliflower warm as a healthy side dish.
