Ingredients
  

  • 1 large head cauliflower cut into bite-sized florets
  • 2 teaspoons olive oil
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest from one lemon
  • 1 tablespoon chopped fresh parsley optional

Instructions
 

  • Fill a large pot with 1 to 2 inches of water and bring it to a boil over high heat.
  • Place the cauliflower florets in a steamer basket and set it in the pot, making sure the water does not touch the vegetables. Cover and steam for about 4 to 8 minutes until the florets are fork-tender.
  • Remove the florets to a bowl. Drizzle with olive oil, then sprinkle with kosher salt, black pepper, lemon zest, and chopped parsley. Toss gently to coat evenly.
  • Serve the cauliflower warm as a healthy side dish.
