A quick and easy side dish that goes surprisingly well with many different mains.

I once had a long conversation with an old friend about the best way to cook cauliflower. As with all vegetables, the debate of how to cook it could last a day. But we settled on steamed cauliflower being one of the best, because it’s the quickest way to get the fluffy veggie tender—but not too soft, so that it doesn’t fall apart on the fork before it hits your mouth. That’s the trickiest thing about cauliflower—getting just the right texture, so it’s as enjoyable to eat as it is to look at.

And truly, steamed cauliflower is a beautiful dish. To me, when it comes out of the pot, it looks like a collection of pearls. And then when I toss it in the seasonings, the bursts of yellow and green are so enticing, my mouth can’t help but water at the sight. So, if you’re seeking something easy to whip up that still stands out as a pretty side dish, steamed cauliflower is ideal. Bring it to a potluck or serve it up for loved ones any day of the week. Whether the occasion is big or small, steamed cauliflower is a simple and savory win.

Why use lemon zest?

Most of the time, when I cook cauliflower, it’s with some kind of cheese topping or sauce. But lemon zest adds a refreshing “zing” to this cruciferous veggie that can’t be ignored. The light and fresh tanginess complements cauliflower’s mild flavor, while adding its own that tastes like a burst of sunshine. That, plus fresh parsley, makes this a picnic-lover’s dream dish.

How do I store leftovers?

Let your steamed cauliflower come to room temperature, and then transfer it to an airtight container. Refrigerate it for 2-3 days. To reheat, pop it in the microwave with a moist paper towel on top for 1-2 minutes, until each floret is sizzling with warmth. Alternatively, you can transfer your leftover cauliflower to an oven-safe dish and bake it at 350°F for 10-15 minutes.

Ingredients
  

  • 1 large head cauliflower cut into bite-sized florets
  • 2 teaspoons olive oil
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest from one lemon
  • 1 tablespoon chopped fresh parsley optional

Instructions
 

  • Fill a large pot with 1 to 2 inches of water and bring it to a boil over high heat.
  • Place the cauliflower florets in a steamer basket and set it in the pot, making sure the water does not touch the vegetables. Cover and steam for about 4 to 8 minutes until the florets are fork-tender.
  • Remove the florets to a bowl. Drizzle with olive oil, then sprinkle with kosher salt, black pepper, lemon zest, and chopped parsley. Toss gently to coat evenly.
  • Serve the cauliflower warm as a healthy side dish.
