Ingredients
  

  • 1 1/2 tablespoons bacon grease
  • 1 1/4 cups heavy whipping cream
  • 8 ounces cream cheese softened and cut in cubes
  • 3 tablespoons chicken broth
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon xanthan gum

Instructions
 

  • In a large nonstick skillet over medium heat, add bacon grease and let warm up/melt if not already liquified.
  • Add the heavy cream and whisk to fully combine grease and cream.
  • Add the cream cheese cubes and whisk continuously until fully melted and combined.
  • Add the chicken broth, salt, and pepper. Whisk continuously until everything is absorbed and mixed. The mixture should resemble thick white gravy at this point.
  • Add the xanthan gum and whisk for 30 seconds until combined. Do not cook too long or it will become glue-like. Serve immediately.
