Low-Carb White Gravy (Country Gravy)
Ingredients
- 1 1/2 tablespoons bacon grease
- 1 1/4 cups heavy whipping cream
- 8 ounces cream cheese softened and cut in cubes
- 3 tablespoons chicken broth
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon xanthan gum
Instructions
- In a large nonstick skillet over medium heat, add bacon grease and let warm up/melt if not already liquified.
- Add the heavy cream and whisk to fully combine grease and cream.
- Add the cream cheese cubes and whisk continuously until fully melted and combined.
- Add the chicken broth, salt, and pepper. Whisk continuously until everything is absorbed and mixed. The mixture should resemble thick white gravy at this point.

- Add the xanthan gum and whisk for 30 seconds until combined. Do not cook too long or it will become glue-like. Serve immediately.




Wonderful!!! One more successful tool to add to my low carb lifestyle. My suggestion would be not to be afraid to thicken. I might try les Xanthan gum.
