Ingredients
  

  • 16 ounces lean ground beef
  • 1 medium yellow onion diced
  • 1 medium bell pepper diced (any color)
  • 3 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 1/2 cups beef broth
  • 1 can diced tomatoes with juices (28 ounces)
  • 1 can tomato soup (10 ounces)
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • 3 cups frozen mixed vegetables
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat a large pot over medium heat. Add the lean ground beef, diced onion, diced bell pepper, and minced garlic. Cook until the beef is browned and the onions and bell peppers are soft, about 7 minutes. Drain any extra fat.

  • Add diced potatoes, beef broth, canned diced tomatoes, tomato soup, Worcestershire sauce, Italian seasoning, dried oregano, bay leaf, and season with salt and pepper. Bring the mixture to a boil, then lower the heat and simmer for 10 minutes.

  • Stir in the frozen mixed vegetables and continue simmering for 15 minutes until the potatoes are tender. Remove the bay leaf before serving. Garnish with chopped parsley.
