On the origins of yum yum sauce
Delicious as it is, yum yum sauce is not authentically Japanese. In fact, the sauce is believed to have been invented sometime in the late 20th century when hibachi dining became popular in the United States and chefs created a mayo-based sauce that would appeal to American palates. Though we do not know who invented the sauce precisely, it was Terry Ho, a restaurateur from Georgia, who was the first to bottle it and launch it to fame.
These days, you’ll find many varieties of this tempting sauce at hibachi restaurants across the country, but the basis remains the same: mayo, ketchup or tomato paste, sugar, and rice vinegar.

How do I store leftovers?
Yum yum sauce can be kept in an airtight container in the fridge for up to 2 weeks. You can also freeze it in a freezer-safe container for up to 3 months. Just be sure you let it thaw in the fridge overnight. It will need a good stir, as the ingredients may have separated over time.
