I can’t tell you how many times we ate ready-made spinach puffs on New Year’s Eve when I was little. It must have been every year up until the moment I moved out. They were one of those easy grab-and-go appetizers that made the holiday so fun. Plus, when I got older, I realized that they went marvelously well with champagne.

But now that I have my own household and family to take care of, it’s important that I know how to make all my childhood favorites fresh and from scratch. Then, taking them out of the oven is even more satisfying. That’s why this recipe is so handy! As it turns out, crafting homemade spinach puffs isn’t hard at all. For bakers new and old, it’s an easy and enjoyable way to bring a little creamy, cheesy goodness to any party.

Each bite is flaky, tender, and warm—perfect for giving your guests a restaurant-level experience in the comfort of your home. With earthy hints of garlic, onion, and dill, these spinach puffs are worth drooling over.

What’s special about puff pastry?

As you can see, puff pastry is defined by its flaky layers. This delicate pastry is cleverly made by placing a slab of butter inside wheat-based dough and then rolling and folding the dough multiple times to create layers. Once baked, the pastry puffs up nicely and turns golden brown, creating a satisfying experience with each bite. It’s the kind of crust that melts in your mouth, thanks to all the butter and rolling of the dough. How do I store leftovers?

Although I rarely have leftover spinach puffs—because that’s how yummy they are—I do make sure to keep an airtight container handy just in case. As long as they’re completely cool, you can pop them in the container and then refrigerate them for up to 4 days. For longer storage, slide them into a freezer-safe bag and separate them with parchment. Freeze them for 1-2 months and thaw in the fridge overnight. To reheat, simply pop them in the microwave for 30-45 seconds or the oven at 300°F for 5-10 minutes.

Ingredients
  

  • 4 ounces cream cheese softened
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 large egg
  • 1 tablespoon Parmesan cheese grated
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried dill
  • 2 cups fresh spinach chopped and packed
  • 3/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry thawed
  • 1 tablespoon butter melted

Instructions
 

  • Microwave the cream cheese in 10-second bursts until soft. Whisk in the garlic powder, onion powder, egg, Parmesan, olive oil, and dried dill until smooth.

  • In a bowl, mix the chopped spinach with the crumbled feta. Season with salt and pepper.

  • Preheat your oven to 400°F. On a lightly floured surface, cut the puff pastry into 9 equal squares. Press each square into a greased muffin cup. Spoon a dollop of the creamy mixture, then top with the spinach mixture.

  • Gather the pastry corners over the filling and press gently to secure. Brush the tops with melted butter and bake for about 20 minutes until golden. Let cool for 10 minutes before serving.
