Transform ordinary veggies into a superstar side dish with this easy and versatile recipe!

Tired of the same old veggies? Starting to feel like steamed broccoli is more of an obligation than a pleasure? I get it. We all want to eat healthier, but familiarity really does breed contempt—especially when it comes to veggie side dishes.
That’s why you need to learn how to roast broccoli! If you’ve only ever had it steamed or boiled, you’re missing out on a wonderful world of taste and texture. With this recipe for roasted broccoli, you’ll enter a new era of culinary excitement with nearly endless possibilities for experimentation.
That might be overstating it a bit—but when I discovered how easy it is to roast broccoli, my cooking changed dramatically. I’ve always loved the nutritional benefits of eating broccoli on the regular. But, like you, I got bored with having it the same way every time. Now, I roast it a little bit differently for each meal. I might add garlic and Italian seasonings if I’m making pasta for dinner. If I’m cooking a Mediterranean dish, I’ll sprinkle on fresh rosemary and basil.
The biggest payoff for roasting versus steaming, though, is the enhanced flavor profile. Roasted broccoli takes on a slightly smoky character, deepening its earthy, woody notes and bringing out a sweetness I’d never noticed before. Plus, it gets a little crispy when you roast it, instead of the soft, mushy texture that comes from steaming. No matter what you pair your roasted broccoli with, you’ll find yourself delighted with the novelty it brings to the table!

How to make this recipe your own
Consider this roasted broccoli recipe your starting point for culinary creativity! You can easily make this dish your own by mixing up the seasonings, adding other toppings, or otherwise tailoring it to your preferences.
The only change I strongly advise against is using butter instead of olive oil. Butter burns quickly, so the high heat and longer roast time would leave behind bitter flavors, dark spots, unwanted smoke, and possibly even acrid compounds. Not ideal!
The seasonings are where you can really flex your creativity! A sprinkle of dried or fresh oregano, thyme, dill, or rosemary would add bright herbaceousness. A dash of smoked paprika, cumin, or cayenne pepper would bring in deep savoriness and a little kick of heat. Pine nuts or slivered almonds can add crunch and extra protein to this dish—but wait until step four to sprinkle them over the broccoli with the Parmesan and lemon juice so they don’t burn. Alternatively, adding minced garlic to the oil before drizzling it over the raw broccoli will add deeply aromatic and savory notes to your finished dish.

How do I store leftovers?
Let your leftover roasted broccoli cool completely, then transfer it to an airtight container or zip-top bag. It’ll keep in the fridge for up to 4 days or in the freezer for up to 4 months. Thaw frozen leftovers overnight in the fridge if you want to enjoy them on their own—or use them directly from the freezer in recipes that involve further cooking, like casseroles, stir-fries, or omelets.
