That’s why you need to learn how to roast broccoli! If you’ve only ever had it steamed or boiled, you’re missing out on a wonderful world of taste and texture. With this recipe for roasted broccoli, you’ll enter a new era of culinary excitement with nearly endless possibilities for experimentation.

That might be overstating it a bit—but when I discovered how easy it is to roast broccoli, my cooking changed dramatically. I’ve always loved the nutritional benefits of eating broccoli on the regular. But, like you, I got bored with having it the same way every time. Now, I roast it a little bit differently for each meal. I might add garlic and Italian seasonings if I’m making pasta for dinner. Consider this roasted broccoli recipe your starting point for culinary creativity! You can easily make this dish your own by mixing up the seasonings, adding other toppings, or otherwise tailoring it to your preferences.

The only change I strongly advise against is using butter instead of olive oil. Butter burns quickly, so the high heat and longer roast time would leave behind bitter flavors, dark spots, unwanted smoke, and possibly even acrid compounds. Not ideal!

The seasonings are where you can really flex your creativity! A sprinkle of dried or fresh oregano, thyme, dill, or rosemary would add bright herbaceousness. A dash of smoked paprika, cumin, or cayenne pepper would bring in deep savoriness and a little kick of heat. Pine nuts or slivered almonds can add crunch and extra protein to this dish—but wait until step four to sprinkle them over the broccoli with the Parmesan and lemon juice so they don’t burn. Alternatively, adding minced garlic to the oil before drizzling it over the raw broccoli will add deeply aromatic and savory notes to your finished dish.

Thaw frozen leftovers overnight in the fridge if you want to enjoy them on their own—or use them directly from the freezer in recipes that involve further cooking, like casseroles, stir-fries, or omelets.

Ingredients
  

  • 1/2 pound broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon cut in half
  • 1 teaspoon chili flakes optional
  • 3 tablespoons Parmesan cheese grated, optional

Instructions
 

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper. 
  • Place the broccoli florets in a large bowl and drizzle olive oil evenly over them. Add the salt and pepper to taste. Gently toss the broccoli until the oil, salt, and pepper are evenly distributed.
  • Spread the broccoli florets out in a single layer on the prepared baking sheet. Place one half of the lemon on the tray. Bake for 45 minutes. 
  • Take the baking sheet out of the oven. Sprinkle chili flakes and Parmesan cheese over the broccoli. Squeeze the unbaked lemon half onto the broccoli. Return the sheet to the oven to melt the cheese, about an additional 5 minutes.
  • Remove from oven. Serve immediately.
