If you’re the kind of person who skips breakfast and ends up at the window of the nearest fast-food joint, these savory little bites will change that for good. We’re not reinventing the wheel here, but these are definitely worth trying. They’re truly delicious, easy, budget-friendly, and keto-approved!
One recipe, endless variations
The best recipes are those you’ll never tire of because you can tweak them to your heart’s content. And this just happens to be one of them! If you don’t eat meat like me, feel free to leave out the bacon or use roasted peppers as a replacement. You can also experiment with different types of cheeses like Comté, cheddar, Monterey Jack, or Gouda. Want to add some veggies? Try diced bell peppers, sautéed and chopped mushrooms, leeks, or green onions. For extra flavor, add in some finely chopped herbs (we love flat-leaf parsley, chives, chervil, and dill), jalapeños, Dijon mustard, or even some chopped olives.
How do I store leftovers?
Transfer your cooled egg bites to an airtight container and store them in the fridge for up to 4 days. You can also double-wrap them in plastic wrap, transfer them to a Ziploc bag or freezer-safe container, and freeze them for up to 3 months. No need to thaw these overnight. Simply pop them in the microwave or heat them up in the oven at 350°F for approximately 8 minutes.

On-The-Go Egg Bites
Ingredients
- 12 slices bacon
- 10 eggs
- 1/3 cup heavy cream
- 1 cup shredded cheddar cheese
- Pinch of salt and pepper
Instructions
- Preheat the oven to 400°F. Grease a muffin tin or use silicone liners.
- Line the muffin tins with the sliced bacon.
- In a large measuring cup, whisk eggs, cream, cheese, salt, and pepper.
- Divide the egg mixture evenly over muffin tin.
- Bake the bites for 15 minutes, or until mostly set. Let cool in the pan for 5 minutes before removing.
