One of the neatest aspects of blogging is connecting with other bloggers all around the globe! Before I became a blogger, I had this fantasy that bloggers were these uber cool, sophisticated, worldly people. Untouchable, if you will.
While that may be true in some cases, the majority of us are just regular ‘ol folks who love food/clothes/travel/kids or whatever the niche may be. Most of us are just like you! But we have these really cool “jobs” that let us play in our passions and share them with you!
So, why am I telling you this? I promise there is a point! See, through blogging, I’ve gotten to know some incredible ladies (and gents)! One of those ladies happens to be good friend Lauren of BonAppeteach.co.
Lauren (or L as some friends call her) is a low carb blogger like me but she has a background in culinary education! If you want to know why things work in a kitchen, she’s totally your girl!
And if you’re a foodie, then you’ll really love her cooking! Lauren has traveled the world and lived in many places so she’s got this database of flavors in her brain. Let me tell ya, some of the recipes she comes up with are just mind-blowing. Girl has skillzzz!
I recently made her Fajita Chicken Nuggets and loved them so much I asked her if I could share them with you here! Obviously, she said yes. 😉

These low carb chicken nuggets are so so tasty! Oh, and they’re a piece of cake to make! Everything gets formed into little chicken patties and fried for a few minutes. Actually, I fixed these low carb chicken nuggets in the morning and reheated them for dinner and they were just as delicious reheated.
I did try baking part of the batch and I really liked the fried ones best. Avocado oil works best for frying keto foods because it has a high smoke point and doesn’t add any flavor (like a coconut oil would)).
Also, just a little tip from one cook to another: a light coating of breading is all you need.
I whipped up a spicy cilantro lime sauce to dip them in and served them with my Mexican Cauliflower Rice. Of course, the kids and hubby dipped them in queso which was equally as delicious!

Low Carb Fajita Chicken Nuggets
Ingredients
- 1/4 cup full fat sour cream
- 1 tablespoon chopped cilantro
- 3 teaspoons Mexican hot sauce I used Cholula
- 2 teaspoons lime juice
Instructions
- Combine all ingredients in a small bowl and mix with a fork until combined.
- Chill in the fridge until serving. Garnish with fresh cilantro, if desired.
