The cheeseburger is an iconic invention of the United States. Germany may be the birthplace of the hamburger—but the idea of topping a beef patty with cheese before sandwiching it in a bun required good old-fashioned American ingenuity. And it’s long been one of my favorite foods. Whether it comes off my own grill, the flattop at a local eatery, or the griddle of a fast-food restaurant, I love a greasy, ooey-gooey cheeseburger!

I haven’t had one in a long while because my partner and I are living that low-carb lifestyle. I get a hint of beef-and-cheese comfort from casseroles, but none have been as deeply satisfying as this keto cheeseburger pie. The savory combo of ground beef, onions, mustard, and Worcestershire sauce beautifully replicates the savory umami of a bunless burger. And with cheddar cheese both inside and on top of this dish, it delivers a delightfully cheesy flavor profile that calls to mind nothing more than a classic cheeseburger.

I made it with a fathead crust so I could get as close to the real thing as possible. It only added a few minutes to my prep time, but it totally leveled up the dish. This is a fantastic weeknight meal for those days when you want fast food but don’t want to wreck your whole day’s low-carb efforts!

How to make this a true pie

This recipe delivers a bunless version of a cheeseburger in a crustless version of a savory pie. If you want more of a traditional pie experience—while still keeping the carbs in check—add a fathead crust! Here’s how:

Start with this recipe for Fathead-Style Pizza Dough, but leave out the Italian seasonings. The combo of mozzarella cheese, almond flour, and egg creates a delightful crust that you can roll out and fit into your pie plate.

Next, pre-bake the crust so it’ll hold up to the moist cheeseburger filling. Just pop the crust into a 375°F oven for about seven to 10 minutes, until it’s set and lightly golden. Let it cool for a few minutes.

Spread in your beef and cheese filling, pour in the egg mixture, and top with cheese. Then bake as directed in the recipe.

How do I store leftovers?

Let your cheeseburger pie cool completely before storing it, but don’t let it sit at room temp for more than 2 hours. Store leftovers in an airtight container in the fridge for up to 4 days. You can also freeze leftovers for up to 3 months. Thaw overnight in the fridge. Reheat in a 325°F oven or the microwave until the dish is piping hot throughout.

Ingredients
  

  • 1 pound ground beef
  • 2 tablespoons onion diced
  • 1 teaspoon salt
  • Pinch pepper
  • 1 teaspoon garlic powder
  • 2-3 dashes Worcestershire sauce
  • 1/4 teaspoon ground mustard
  • Bacon bits optional
  • 2 cups cheddar cheese shredded and divided
  • 2 eggs
  • 2 teaspoons avocado oil mayo
  • 1/4 cup heavy cream
  • Low-sugar ketchup, mustard, pickles optional for garnish

Instructions
 

  • Preheat oven to 350°F. Prepare a pie plate with a spritz of nonstick cooking spray.
  • Cook the ground beef in a skillet, breaking it up into smaller pieces with a spatula or wooden spoon, until it's completely browned, about 8-10 minutes.
  • Add to the skillet the diced onions, salt, pepper, and garlic powder. Continue cooking until onions are translucent, about 1-2 minutes. Stir in the Worcestershire sauce and mustard. Add the bacon bits if desired.
  • Remove the skillet from the heat and fold in 1 cup of the cheddar cheese. Spread the beef mixture evenly in the prepared pie plate.
  • In a medium mixing bowl, whisk together the eggs, mayonnaise, and cream. Pour this mixture evenly over the beef mixture, then sprinkle the remaining cheddar cheese on top.
  • Bake the casserole uncovered until it's hot throughout and the cheese is bubbly, about 25 minutes.
  • Remove from the oven and let the casserole rest for 3-5 minutes before slicing. Serve hot with optional burger toppings like low-sugar ketchup, mustard, and sliced pickles.

    How do dried onions become translucent? Should it say diced?
