Sometimes you just want to lay out a spread that looks fancy but takes next to no cooking. That’s exactly what I do when I build a good keto charcuterie board. It’s one of my favorite ways to put together a beautiful snack that works for just about anyone—whether they’re low-carb or not. Around here, if I show up with a tray full of meats, cheeses, pickles, and pork rinds, you better believe it’s the first thing that disappears.

Now, I’ve made more charcuterie boards than I can count—some for family get-togethers, others for client cocktail hours or Southern-style porch parties. What makes a board really work is variety. You want salty, savory, creamy, crunchy, and just a little sweet. And if you’re eating keto? You can still have all of that without breaking your carb budget. This board proves it.

See, everybody you know, keto or not, can get behind some good-tasting meats, cheeses, and nibbles—especially when you’ve got flavors that contrast and complement each other like crazy. It’s the kind of spread that satisfies every kind of snacker at the table.

Contrasting and complementary flavors and textures

When you’re putting together a charcuterie board—especially one that’s keto—you want more than just a pile of meats and cheeses. You want to play flavors and textures off one another. For instance, put something smooth and creamy right up next to something bold and tangy. Set crunchy, sweet nibbles next to a soft, pungent cheese, say.

Start with your meats. A fatty, savory slice of salami pairs beautifully with a thinner, more delicate prosciutto. Peppery capocollo brings spice, while a good summer sausage adds a mellow richness. Then move to your cheeses. Think about contrast and balance here, too. A soft brie or fresh mozzarella brings creamy, mild notes, which rub nicely against a sharp aged cheddar or a sharp, crumbly blue cheese. Semi-hard cheeses like Gouda or Jarlsberg offer that nutty, slightly sweet middle ground.

Crunch is key, especially on a keto board. Pork rinds, Parmesan crisps, and sliced cucumber add that satisfying snap without the carbs. Nuts like pecans and macadamias bring richness and texture, while pumpkin seeds or cacao nibs add a little crunch with a flavor twist. Finally, don’t forget something bright, sour, and sweet. A few raspberries or blackberries add color and just a hint of sweetness to balance the salty and savory. Pickles, pepperoncinis, or marinated mushrooms bring acid and tang to cut through the richness.

How do I store leftovers?

Most cheeses will keep their best texture and taste when wrapped and placed in an airtight container in the fridge—usually up to a week. Meats should be tightly wrapped or sealed in a storage bag and enjoyed within 3–5 days for peak flavor. Nuts, seeds, and chocolate are best transferred to jars or zip-top bags and kept in a cool pantry spot. Fresh vegetables like cucumber and celery, along with pickled items, should be stored in airtight containers in the fridge and eaten within 2–3 days so they keep their crunch and brightness.

Instructions
 

  • Choose a few options from the meat, cheese, and fruit/vegetable categories.
  • Then add any additional ingredients you’d like from the other categories.
  • Arrange nicely on a large cutting board or platter, and serve!
