Jazz up a classic veggie side with some succulent bacon and freshly grated Parmesan.

It can be hard to eat your veggies regularly, especially if you grew up in a household that didn’t encourage you to try them when you were little. Luckily for modern chefs, there are plenty of ways to spruce up your veggies so that they’re not only more appealing to you but also to your loved ones. Bacon-wrapped asparagus is a great example of this because it combines the earthy, refreshing taste of asparagus with some mouthwatering, lightly crisped bacon. It has just the right amount of savory and smokiness and is ideal as an appetizer or side.

Whether it’s in the morning at brunch or in the evening with dinner, bacon-wrapped asparagus can catch the attention of everyone at your dining table. I’ve even seen some picky eaters in my family go for these well-dressed spears, simply because they love bacon. Each bite tastes rich, but not overwhelming. So, if you’re trying to get your loved ones to eat more veggies, this is a clever and delicious way to encourage them.

Can I use turkey bacon?

Some folks, myself included, prefer turkey bacon because it’s a much leaner meat than pork. With less fat, it will be less greasy, which, in my opinion, is a lot more palatable. That being said, turkey bacon has a slightly different texture, so don’t expect it to be an exact replica of the pork version.

How do I store leftovers?

Let your bacon-wrapped asparagus cool to room temperature and then transfer them to an airtight container. Refrigerate them for up to 3 days or transfer them to a freezer-safe container and freeze for 2-3 months. Warm them up in the oven at 350°F for 5-10 minutes, until they’re sizzling.

Ingredients
  

  • 16 asparagus spears
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 8 slices bacon cut in half lengthwise
  • 4 tablespoons Parmesan cheese grated (optional)

Instructions
 

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
  • Rinse the asparagus and trim off the woody ends. Arrange the spears on the baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, and onion powder.
  • Wrap each asparagus piece with a half slice of bacon, placing the seam side down.
  • Bake for about 20-25 minutes, or until the bacon is crispy and the asparagus pieces are tender. If using, sprinkle Parmesan on top when serving.
