  • 1 large eggplant washed
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions
 

  • Preheat the oven to 425 F
  • Cut the eggplant into about 1 inch cubes.
  • Line a baking tray with parchment paper, add the eggplant, and toss with salt and olive oil.
  • Place in the oven and bake for 20 minutes until golden and soft all the way through.
