Low-Carb Everything Bagel Chicken Casserole

Ingredients
  

  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 1 tablespoon mustard yellow or Dijon
  • 2 tablespoons everything bagel seasoning plus more, for topping
  • 1/2 teaspoon salt
  • Pinch of pepper
  • 3 cups cooked chicken about 12-14 ounces
  • 2 cups cauliflower rice about 16 ounces, thawed if frozen

Instructions
 

  • Preheat oven to 375°F. Prepare an 8x12-inch or 9x13-inch casserole dish with a spritz of nonstick cooking spray or a light coating of butter.
  • In a large mixing bowl, combine the cream cheese, sour cream, mustard, bagel seasoning, salt, and pepper. Stir until evenly mixed.
  • Fold in the cooked chicken and cauliflower rice until well combined.
  • Spread the mixture into the prepared casserole dish. Top with a bit more bagel seasoning, if desired.
  • Bake until the top is slightly golden and the casserole is heated through, about 25 minutes. Let the dish rest at room temp for 5 minutes to make slicing easier. Serve hot.
