Ingredients
  

  • 4 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons garlic minced
  • 24 ounces chicken breast

Instructions
 

  • In a small bowl, whisk together the olive oil, lemon juice, rosemary, thyme, salt, pepper, and garlic.
  • Place the chicken breast in a sturdy resealable bag. Pour the marinade over the chicken and seal the bag, removing excess air and making sure the chicken is entirely covered in marinade. Place the bag in the fridge for at least 30 minutes, or up to 4 hours.
  • To roast your chicken breast: Preheat the oven to 400°F. Remove chicken from the marinade and let excess drip off. Pat lightly with paper towels. Place breasts on a parchment-lined baking sheet in a single layer. Bake until a meat thermometer inserted in the thickest part reaches 165°F—typical roasting time is 22–26 minutes, but start checking at 18 minutes for thinner cuts. Let rest 5 minutes before serving.
  • To grill your chicken breast: Preheat the grill to medium-high (about 400°F) and oil the grates. Place marinated chicken breasts directly on the grill, close the lid, and cook undisturbed for 6–8 minutes. Flip once, then grill for another 6–8 minutes, or until the chicken reaches 165°F at the thickest part. Transfer to a plate and let rest 5 minutes before serving.
