Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 1/2 tablespoons granulated sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 pinch black pepper
  • 1/2 cup buttermilk at room temperature
  • 2 tablespoons vegetable oil
  • 1 large egg at room temperature
  • 1/4 cup grated onion
  • Vegetable oil for frying, enough to fill your pan about 1 1/2 inches deep
  • Green onions chopped (for optional garnish)
  • Preferred dipping sauce such as remoulade (optional)

Instructions
 

  • In a large bowl, whisk together the cornmeal, flour, sugar, baking soda, baking powder, salt, and black pepper.
    Dry ingredients for hush puppies in a white bowl.
  • In another bowl, combine the buttermilk, vegetable oil, egg, and grated onion.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
    Stirring the hush puppies batter until just combined.
  • Heat the vegetable oil in a heavy skillet or Dutch oven to 370°F. Using two small spoons, gently drop rounded spoonfuls of batter into the hot oil.
    Hush puppies frying in hot oil until golden brown.
  • Fry for 2-4 minutes, until golden brown on all sides, turning as needed. Then, remove with a slotted spoon and drain on paper towels. Garnish with green onions and serve with your favorite dipping sauce if desired.
