Easy Keto Crock-Pot Pork Loin

Ingredients
  

  • 2 pounds pork loin roast not tenderloin
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons salt
  • 1/4 cup monk fruit brown sugar substitute
  • 1/4 teaspoon ground nutmeg
  • Pinch of black pepper
  • 1 tablespoon sugar-free maple syrup
  • 1/4 cup water
  • 3 tablespoons apple cider vinegar
  • Fresh parsley for garnish, optional

Instructions
 

  • Place the pork loin fat side up in the Crock-Pot.
  • Use a basting brush to brush the Dijon mustard evenly over the top of the pork loin, making sure to coat the entire top.
  • Sprinkle the salt, monk fruit sweetener, nutmeg, and pepper over the pork loin. If some falls into the pot, that is okay.
  • Drizzle the sugar-free maple syrup over the meat.
  • Pour the water and apple vinegar into the bottom of the Crock-Pot, not directly onto the meat.
  • Cover and cook on low for 6 hours or high for 3 hours, until the meat reaches an internal temperature of at least 145°F.
  • Once cooking is complete, let the pork rest in the closed Crock-Pot for about 10 minutes to allow the juices to redistribute.
  • Transfer the pork loin to a cutting board. Depending on preference, slice it into medallions or use two forks to shred it into chunks.
  • Skim excess fat from the cooking liquid, then spoon some of the pan juices over the pork to keep it moist and flavorful.
  • Garnish with fresh parsley, if desired, before serving.
