- 2 pounds pork loin roast not tenderloin
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons salt
- 1/4 cup monk fruit brown sugar substitute
- 1/4 teaspoon ground nutmeg
- Pinch of black pepper
- 1 tablespoon sugar-free maple syrup
- 1/4 cup water
- 3 tablespoons apple cider vinegar
- Fresh parsley for garnish, optional
Place the pork loin fat side up in the Crock-Pot.
Use a basting brush to brush the Dijon mustard evenly over the top of the pork loin, making sure to coat the entire top.
Sprinkle the salt, monk fruit sweetener, nutmeg, and pepper over the pork loin. If some falls into the pot, that is okay.
Drizzle the sugar-free maple syrup over the meat.
Pour the water and apple vinegar into the bottom of the Crock-Pot, not directly onto the meat.
Cover and cook on low for 6 hours or high for 3 hours, until the meat reaches an internal temperature of at least 145°F.
Once cooking is complete, let the pork rest in the closed Crock-Pot for about 10 minutes to allow the juices to redistribute.
Transfer the pork loin to a cutting board. Depending on preference, slice it into medallions or use two forks to shred it into chunks.
Skim excess fat from the cooking liquid, then spoon some of the pan juices over the pork to keep it moist and flavorful.
Garnish with fresh parsley, if desired, before serving.
