Ingredients
  

  • 1 English cucumber sliced
  • 2 large ripe tomatoes diced
  • 1 small red onion thinly sliced
  • 2 teaspoons fresh basil thinly sliced
  • 2 teaspoons fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and black pepper to taste

Instructions
 

  • Place all the vegetables in a medium bowl along with the fresh herbs.

  • Drizzle the olive oil and red wine vinegar over the vegetables. Season with salt and black pepper. Toss the salad well.
  • Refrigerate for at least 20 minutes. Adjust seasonings before serving.
