- 1 cup cooked and finely chopped broccoli florets
- 1 large egg
- 1/2 cup whole grain breadcrumbs
- 1/4 cup shredded sharp cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 3/4 teaspoon minced garlic
- 3 tablespoons finely chopped onion
- Kosher salt to taste
- 1/8 teaspoon ground black pepper
Preheat your oven to 375°F and lightly grease a mini muffin pan.
In a bowl, mix the cooked, chopped broccoli, egg, breadcrumbs, both cheeses, garlic, onion, salt, and pepper until well combined.
Spoon the mixture into each muffin cup, pressing firmly to pack the mixture and create compact bites.
Bake for about 20 minutes or until the tops are golden brown.
Allow the bites to cool slightly before serving warm. Enjoy your healthy snack!
