Ingredients
  

  • 1 cup cooked and finely chopped broccoli florets
  • 1 large egg
  • 1/2 cup whole grain breadcrumbs
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 3/4 teaspoon minced garlic
  • 3 tablespoons finely chopped onion
  • Kosher salt to taste
  • 1/8 teaspoon ground black pepper

Instructions
 

  • Preheat your oven to 375°F and lightly grease a mini muffin pan.
  • In a bowl, mix the cooked, chopped broccoli, egg, breadcrumbs, both cheeses, garlic, onion, salt, and pepper until well combined.

  • Spoon the mixture into each muffin cup, pressing firmly to pack the mixture and create compact bites.

  • Bake for about 20 minutes or until the tops are golden brown.

  • Allow the bites to cool slightly before serving warm. Enjoy your healthy snack!
