If you’ve been missing the golden, gooey comfort of a classic tuna melt but don’t want to derail your low-carb day, this recipe hands you both the nostalgia and the macros. We’re talking flaky albacore mixed with mayo, crisp celery and onion, all piled onto a quick almond-flour “bread” that toasts up buttery and crisp. Ingredients
  

  • 3-ounce pouch albacore tuna
  • 1 tablespoon mayo
  • 1 tablespoon finely chopped celery
  • 1/2 tablespoon finely chopped onion
  • 1/8 teaspoon garlic powder
  • Pinch of salt
  • 1 1/2 tablespoons butter divided
  • 1 egg
  • 3 tablespoons almond flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon Parmesan cheese
  • 1/4 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 400°F.
  • Prepare the ingredients for the tuna salad first: mix the pouch of tuna with the mayo, celery, onion, garlic powder, and pinch of salt.

  • Heat a skillet over medium heat. Add the remaining 1/2 tablespoon of butter and cook each side of the bread for about 2 minutes per side, until toasted.
