If I had to choose five foods that I could not live without, pickles would definitely be on that list. A cold, crunchy, dill pickle is an epic snack on a hot day. I love pickles so much that I actively look for ways to incorporate them into my recipes. Yes, ma’am, I do. Which is why I am bringing you this recipe for keto dill pickle dip.
Am I the only one that thinks pickles should be given their own class in the food group hierarchy? The poor pickles should not be relegated to the condiment aisle any longer.
They deserve their own category because let’s face it, pickles (and pickle juice) can do wondrous things to food.
Want the best chicken nuggets of your life? Brine them chicken in pickle juice.
Have sore muscles or a hangover? Drink pickle juice.
Trying to get into ketosis and feeling a little dizzy? Drink pickle juice. (a.k.a electrolytes)
I mean, y’all, pickles serve so much purpose! We really should be utilizing them more but I guess that’s a different post for a different day.
Today, let’s just relish in the fact that pickles are dee-lish-ush. (haha, see what I did there)
When it’s hot out and I need a snack, my go-to is always something cold and easy, like a keto dip. Something that I can eat standing in the kitchen is always a win in my book.
This dill pickle keto dip is perfect for that! You can mix it up in about 5 minutes and have a tasty, pickle-y, snack on hand for lazy summer days.
One of the hardest transitions for me when is started eating keto was finding a replacement for chips and crackers. Pork rinds are good but they’re not my first choice.
Over the years, I’ve really grown to love chip alternatives to scoop up my favorite keto dips! Some of my favorites include:
- radish slices
- celery sticks
- Quest chips
- Cheese Whisps
- pepperoni slices
- hard salami
- raw broccoli and cauliflower
I had to let go of the idea that dips were only good with a salty crunchy chip or cracker. In fact, I probably love using hard salami as a dip vessel more than anything!
My point is that if you think outside the chip bag, there are really several options for a keto “chip”!
And if you love pickles as much as I do, you could even use pickle chips to scoop up this keto pickle dip!
No matter what you choose to serve alongside this keto appetizer, it’ll be delicious!
