In a large bowl, combine the asparagus, Greek yogurt, and the grated cheddar cheese. In a medium skillet over medium heat, warm the olive oil. Add the diced onion and minced garlic, then sauté.
Sprinkle in the flour and stir for 1 minute. Slowly whisk in the low-fat milk, stirring constantly until the sauce thickens. Season. Pour the thickened sauce into the bowl with the asparagus mixture.
Transfer the mixture into a lightly greased 9×13-inch baking dish. Evenly sprinkle the crushed crackers and Parmesan over the top.
